Maple and Pecan Cookies

Ingredients:

2 1/2 cups Almond Flour

3/4 cup 100% Pure Maple Syrup (extra for coating the pecans)

2 Tbsp Cinnamon

10 Pecan Halves

1 Tsp Baking Powder

1 Tsp Baking Soda

Pinch of Sea Salt

How to:

Preheat the oven to 180 degrees

In a mixing bowl, add all the dry ingredients, almond flour, baking powder, baking soda, cinnamon, and sea salt, stir until all combine.

Then add the dd the maple syrup and bring together until with your hands until a dough is formed

Chill the dough in the freezer for 20 minutes until it hardens slightly

Meanwhile add the pecan halves to a pan on a low heat and add the maple. Stir so the maypole syrup coat the pecans and remove from the heat.

Using an ice cream scoop  to measure out each cookie equally.

Place each cookie ball on a baking sheet and press down to flatten.

Add a pecan half to the centre of each cookie and press down firmly.

Place the cookies in the oven for 12 minutes of until golden brown around the edges.

Let to cool and enjoy 😋
