Ingredients:
1 1/2 cups Buckwheat flour
1/2 cup Vegan Butter
1 cup Coconut Sugar
2 Bananas (mashed)
1/2 cup Plant Based yoghurt
1/2 Cup Vegan Chocolate (chopped)
1/2 Cup Walnuts (Chopped)
1 Tsp Baking Powder
1 Tsp Vanilla Extract
Pinch of Salt
How to :
Melt the butter then take is off the heat and add the coconut sugar.
Pour into a large mixing bowl and add the vanilla, then mix in the mashed banana and the plant based yoghurt.
In separate bowl, combine flour, baking powder and salt.
Gently fold in the banana mixture.
Then add the chopped dark chocolate and walnuts and mix until evenly disbursed.
Cover and place the dough in the fridge for 30 minutes.
Then spoon the dough out to even size cookies onto a lined baking tray.
Bake in the oven for 10 minutes or until the edges are brown
Leave to cool and enjoy 🙂
