Banana and Chocolate Marble Bread

-1 1/4 cup Buckwheat Flour

-1/2 cup Desiccated Coconut

– 4 Tbsp Cacao Powder

-2 No Egg Replacer – I use Orgran (you can use eggs if preferred)

-1/2 cup Maple Syrup (or any other natural sweetener)

-1/4 cup Coconut Oil (melted)

-1/2 cup Plant Based Yoghurt

-3 Ripe Bananas (mashed)

-3 Tbsp Peanut Butter

-1 Tbsp Cinnamon

-1 Tbsp Baking Powder

To Decorate:
-Dark Chocolate (melted)
-Coconut Flakes

How to:
Pre heat oven at 180 degrees and line a loaf tin.

Combine all dry ingredients except the cacao powder in a large mixing bowl.

Prepare you no egg replacer as instructed or if you are using an egg whisk the eggs, then combine with the melted coconut oil and yoghurt and peanut butter.

Mash the bananas and combine with the wet mixture and mix well.

Add the dry mixture and wet mix together and mix well until all combined.

Here comes the fun part…..:)

Divide the mixture into two and add the cacao powder to one half.

Use a large ice cream scoop or a large spoon and spoon the mixtures alternating between chocolate and plain in your loaf tin, think of it looking like a chequers board you will be able to create two layers. (don’t worry if this get messy it will add to the marble affect)

With a skewer or a sharp knife make a figure of eight pattern a few times in the mixture, this will create the nice marble affect.

Bake on the lower shelf of the oven for 45 mins, or until skewer comes out clean.

Decorate with melted chocolate and flaked coconut and enjoy 🙂
